Pastured Goat Meat/Cabrito or Chevon
EB Ranch offers direct to consumer whole goat meat shares. Goats are usually between 18 months to 36 months old before processing. Ask about younger goats or leaving a goat whole for parties, cookouts, or other special occasions
A whole goat is $6 per pound plus a $90 deposit/processing fee. I currently take goats in for processing in August and October, though more dates might open up over time, supply and demand. Goats average out as small as 10 pounds hanging weight to 50 pounds. On average including the deposit, a whole goat price could range from $150-$390. Specify if you want a certain weight range and I'll try to accommodate that. You will pay the remaining price upon pick up or delivery. I will arrange that date with you when I pick the meat from the processors.
All my goats are of the San Clemente Island breed and are pasture/hay raised. They get no additional grain supplementation. While this breed is critically endangered, it is important to find purposes for heritage breed livestock. With the extra males that are not suitable for breeding, they will instead be raised on rotational pastures. Then they will provide nutritious and delicious food for people in and around the area!
Goat meat tastes a lot like a lean beef and should be treated as so in cooking. I highly recommend the cook book "Goat, Cooking and Eating" by James Wheltor for recipe ideas. Or send me an email looking for suggestions on specific cuts.
